Executive Chinese Chef Kevin Xu brings together time-honored favorites, contemporary flavors and Shanghainese traditions in Hua Yuan Brasserie Chinoise’s handcrafted 2026 collection

PASAY CITY, August 10, 2026 — Hilton Manila Newport World Resorts welcomes the Mid-Autumn Festival with “A Bright Full Moon,” its 2026 mooncake collection at Hua Yuan Brasserie Chinoise. Created by Executive Chinese Chef Kevin Xu and his team, the collection brings together traditional baked mooncakes, contemporary flavors, delicate snow-skin varieties and Shanghainese specialties.
Classic baked mooncakes include Five Nuts, Red Bean, and White Lotus with Salted Egg. For a contemporary take, Chef Xu introduces Chinese Bacon, Milk Tea, Salted Egg Pork Floss, Black Sesame, Peach Oolong and Chestnut, blending traditional pastry techniques with flavors suited to modern palates.
“Mooncakes are deeply rooted in tradition, but they also present an opportunity for creativity,” said Chef Xu. “This collection reflects our respect for the heritage of the Mid-Autumn Festival while introducing flavors and experiences that resonate with today’s guests.”

The collection also features snow-skin mooncakes in Rose, Matcha with Salted Egg, Mocha Coffee, Cheese Kiwi Taro, Milk Tea and Osmanthus. Reflecting Hua Yuan’s Shanghainese roots are its Shanghainese Mooncakes with Pork Meatballs and Black Sesame, offering a savory interpretation of the festive favorite
Each mooncake is handcrafted by the Hua Yuan culinary team, from preparing the fillings to molding and baking, reflecting the restaurant’s approach to Shanghainese cuisine through a contemporary lens.
Designed for festive gifting, “A Bright Full Moon” comes in a keepsake woven bag inspired by traditional craftsmanship, with vibrant detailing and refined finishes that extend its appeal beyond the season..
